Here's the pumpkin-chocolate chip brownie recipe. Mind you, it's the first time I've made them and I played with the recipe an old high school friend gave me.

1-1/2 c. all-purpose flour
2 t. baking powder
1 t. salt
2 t. cinammon
1/2 t. mace
1 c. sugar
1 15-oz can pumpkin puree
2 eggs, beaten
1 c. butter, melted
1 c. semi-sweet chocolate chips

Mix the dry ingredients in a bowl. Add the wet ingredients into the dry ingredients. Pour into a buttered pan and bake at 350 till toothpick comes out clean, about 35minutes.

This is what I did and I would probably change it a bit the next time. I think I'd cut down on the chocolate chips by 1/4 c. It was just too many for my taste. I want to try it with fresh roasted pumpkin to see if that adds to the flavor. I put 1/2 c. less sugar than was called for in a single batch (this was a double batch) so it might not be sweet enough for you, though the chips add to the sweetness. I actually put in 3 eggs because my hens are still laying eggs on the small side, but in retrospect it was a tad too caky for me (I like chewy brownies), so next time I'd do 2 eggs to see if that helped.

In the end, the flavor was good enough that my husband took some to work for a snack - that's a good sign; it means he liked them.

I just harvested my (only 2)Jarrahdale pumpkins yesterday, so in a few weeks I hope to be enjoying this as the fruits of my labor. THANK YOU! WHat a wonderfully timed post for me!

First comment I've posted here. I follow your blog since I also live in South Florida (Dania Beach) and am interested in homesteading in the city. My husband and I have great plans (if not illegal) for when we buy a single family house one day :)

I just had to comment on the pumpkin chocolate chip brownies. Anything with pumpkin and chocolate is a total weakness of mine! Everything looks so good. Thanks for sharing!

Thanks for posting the recipe. I am baking some today. I'll use some of my calabaza squash - we are overrun with our harvest and giving it away! I'll post about it later, if it turns out. Thanks for the inspiration! ;)

Mary, let me know how the brownies turn out and if you changed anything so I can try it.

My local extension agent made the comment the other day that instead of using the term xeriscaping we are now using Florida Friendly Landscaping. You can even have your yard certified as Florida Friendly through the County Extension. Perhaps the county government can be enlightened.

About Me

My Photo
I'm an almost 50-year-old woman trying to create a more sustainable lifestyle for my family on our less than 1/5th acre urban homestead in south Florida. You're welcome to follow our journey as we attempt to grow as much of our own organic produce as our little yard can take, raise backyard chickens for eggs, compost, and amusement, try to reduce our carbon footprint, learn to preserve food by canning, freezing, and dehydrating, and hopefully turn our little urban homestead into a profitable venture.

About This Blog

My Edible Yard was created in an effort to spur myself on while publicly journaling my trials, errors, and successes in the creation of our urban homestead. The key word here is publicly as I am famous for zealously starting projects and then abandoning them. In making my south Florida urban homesteading experience public, I hope to force myself to continue on with the project and actually create a more sustainable life for my husband and me. So please send kind words of encouragement, gardening and cooking tips to keep me going. They are all much appreciated.
